Asian Chicken Salad
Infused with Orange, Ginger and Sesame Flavors
This Asian Chicken Salad is a delicious fresh summer meal. It's light, healthy and stands on its own without the need for anything else on the side. Not only does it taste great but it looks good as well.
The dressing has a wonderful flavor and once it's mixed in with all of the vegetables it becomes very mild. Of course, you aren't limited to what veggies you add. It's usually best to use what is in season at the time you make it.
You can use a variety of different kinds of chicken. You can bake or grill your own chicken, buy a rotisserie chicken or use canned chicken if you are pressed for time.
Asian Chicken Salad Recipe
Ingredients:
Dressing:
1 teaspoon finely chopped fresh ginger or ginger powder
1/3 cup rice vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 teaspoon toasted sesame oil
1 (1 ounce) package dry onion soup mix
2 teaspoons white sugar
1 clove garlic, mashed
Salad:
1 (8 ounce) package bow tie or small shells pasta
1/2 cucumber sliced
1/2 cup diced red bell pepper
1/2 cup coarsely chopped red onion
2 diced Roma tomatoes
1 carrot, shredded
1 (6 ounce) bag fresh spinach or your favorite type of lettuce
1 (11 ounce) can mandarin orange segments, drained
2 cups diced cooked chicken
1/2 cup sliced almonds
Preparation:
Dressing:
Whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended.
Cover, and refrigerate until needed.
Salad:
Boil pasta until done and drain.
Toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta.
Pour the dressing over the salad mixture, and toss again to coat evenly.
Serve immediately.
