Barbeque Chicken Recipe
With a handy tip for Grilling Chicken

Here is a Barbeque Chicken Recipe that is sure to make you a hit at dinner time. My wife Jane, says that she likes her bbq chicken slathered in sauce and very gooey. Fortunately, that is the way I like it also.

Grilling Tip:
To help you out when grilling your chicken; Precook your chicken in the oven first. The reason for this is to cook off most of the fat from the skin. By doing that we get fewer flare ups on the grill and it has the added advantage of taking less time to cook on the grill using less propane or charcoal.

We have listed 3 pounds of chicken pieces in this recipe but it doesn't matter how much you cook. You may only need barbeque chicken for just two people or you may just want to buy and cook only chicken thighs.

The chicken will cook on the grill until the skin turns a golden brown. Then you can start to brush on the bbq sauce. If you start putting on the sauce any earlier, it will probably just slide off of the pieces and create a big mess. Turning and brushing the chicken with sauce every few minutes will create a nice thick coating with a few crunchy bits.

 

How To Barbeque Chicken


Ingredients:

1 teaspoon salt
1 teaspoon pepper
3 pounds bone-in, skin-on chicken pieces
A bottle of your favorite bbq sauce (poured into a cup for easier access)
Brush for sauce
Instant read thermometer

 

Preparation:

Preheat oven to 350 degrees F

Trim pieces of any large clumps of fat that is hanging over the edges
Sprinkle salt and pepper all over chicken pieces.
Place chicken pieces in a large baking dish or two smaller baking dishes, whatever works to hold all of the chicken.
Place chicken in oven and cook for 1/2 hour.
Preheat gas grill to a medium heat. If you are using a charcoal grill then you will need to start your coals during the time you are cooking the chicken so that it will be ready to go.
Take your chicken out to the grill and cook them turning every 5 minutes until they are turning a golden brown, we usually close the lid on our gas grill in between turning the chicken.
At this point you can start brushing barbeque sauce onto the chicken and then flipping them over and brushing the other side.
Keep adding sauce and turning chicken for about 20 minutes. The chicken will start to get a nice thick coating of sauce and some of it will carmelize and get crunchy.
If your grill starts to flare up then move the chicken out of the way of the flame until it dies down.
Cook until the internal temperature of breast meat registers 165 degrees.
We use an instant read thermometer for this.
