BBQ Chicken Rub
Wake up your Grilled Chicken

If you want to give your BBQ Chicken an extra kick in flavor then try adding a BBQ Chicken Rub before you begin your bbq chicken cooking.
This is a great poultry rub. It works well on grilled chicken wings also.
We usually keep a supply of this rub in a small sealable container. One word of caution though. Don't put your hands back into the container of rub after you have touched raw chicken. I caught myself doing this by accident and had to dump the container of rub when I was done. It's best to keep the rub in the dry environment of the refrigerator because the brown sugar attracts moisture and can cause the rub to get too moist.
Rub for Cooking BBQ Chicken
Ingredients:
- 1/2 cup brown sugar
- 1/2 cup Paprika
- 1/4 cup celery salt
- 1/4 cup black pepper
- 2 tablespoons onion powder
- 1 tablespoon lemon pepper
- 2 tablespoons dry mustard powder
- 2 tablespoons chili powder
- 1/2 Teaspoon cayenne
Preparation:
- Mix dry ingredients together in a sealable container or an empty spice shaker.
- Make sure the chicken is dry. Pat the pieces down with paper towels if necessary.
- Rub the spices into the chicken, making sure you get the rub into the all parts of the chicken.
- Let chicken sit for anywhere from 3 hours to overnight in the refrigerator.
- Bake the chicken in the oven first if you want to give it a head start.
- Otherwise, put it on a pre-heated grill and cook until the the internal temperature of the chicken reaches180 degrees F for all parts except the breasts. The breast meat should reach 165 degrees F when measured with a thermometer.
- When chicken is almost finished grilling, brush on both sides with barbecue sauce.
