This Blackened Chicken recipe is a take off on the original Cajun recipe, which happened to be Blackened Red Fish.
Blackening is a cooking method where a meat, such as chicken in this case, is covered in melted butter and coated in a spicy cajun seasoning, then cooked quickly over high heat in a cast iron skillet. It was developed by New Orleans chef Paul Prudhomme. This cooking process creates a spicy char coating on the outside while keeping the inside moist and tender.
Since this recipe was originally for fish, all the cooking was done in the skillet but chicken breast you buy from the store is thicker and won't cook all the way through without burning them to a crisp. Unless you are going to slice or pound your chicken into 1/2 inch size pieces then you will need to finish cooking your chicken breasts in the oven to get them up to 160 degrees.
I can't tell you how much seasoning to put on your chicken because it depends on how spicy your seasoning is and how much heat you like. We usually sprinkle on the seasoning light to medium in coverage. Some people like it super hot and completely cover the chicken in spice.

Blackened Chicken Recipe
Ingredients:
Cast Iron pan
3-4 boneless skinless chicken breasts
1/2 cup Melted Butter
Cajun Seasoning (Store bought or Home made)
Vegetable Oil
Marinade:
2 cups Water
2 tablespoons of Soy Sauce
4 tablespoons Lime juice
1 tablespoon of Worcestershire Sauce
Preparation:
Place the marinade ingredients and chicken into a sealable plastic bag and marinate for two hours. Best if left over night.
If you are using thick pieces of chicken then pre-heat your oven to 350 degrees.
If you have pounded or sliced the chicken to 1/2 inch thickness then it will most likely cook all the way through in the skillet.
Remove chicken from bag and pat dry with paper towels.
Melt butter in the microwave and coat the chicken pieces with it.
Sprinkle the Cajun Seasoning over both sides
Heat your Cast Iron Skillet on medium high heat and add a couple tablespoons of Vegetable Oil
Cook the chicken breasts on each side until they have a nice carmelized black coating and remove to a baking dish.
Check the interior temperature of your chicken. If it hasn't reached 160 degrees then finish cooking it in the oven.
