Chicken and Dumplings Recipe
Warms You Up on a Cold Day
A traditional Chicken and Dumplings Recipe can get very involved and take a lot of time to prepare. So we have provided an easier recipe which still gives you all of the flavor but takes less time to make.
Our family considers this to be one of our favorite comfort foods. Our kids get a big smile on their face when they come home to this easy chicken and dumplings recipe on a cold winter day. Our smallest child is a very finicky eater. Too see him dig in and eat almost all of his dinner makes this recipe a winner in my book. Even if he makes a big mess in the process.
Chicken and Dumplings
Prep Time: 30 min
Cook Time: 1 hour
Ingredients:
- 5 cups chicken broth
- 2 lbs. skinless, boneless, chicken breasts
- 5 Tbls butter
- 1 large chopped onion
- 1 tsp salt
- 3 minced garlic cloves
- 6 Tbls all-purpose flour
- 1/3 cup heavy cream
- 1/2 tsp dried thyme
- 2 bay leaves
- 1 1/2 cups frozen mixed veggies
Dumplings Mixture
- 2 cups flour
- 1 Tbls baking powder
- 1/2 tsp salt
- 1 1/3 cups heavy cream
Preparation:
- Add chicken broth to a large pot and cook over high heat.
- Add chicken and bring to simmer.
- Cover and continue to simmer about 10 minutes or until chicken is cooked through.
- Move chicken to a plate.
- Pour broth into a bowl.
- Return empty pot to medium-high and melt 5 Tbls butter.
- Add onion and salt, cook until onions are soft, about 7 minutes.
- Mix in garlic and cook about 30 seconds.
- Mix in flour and stir for one minute.
- Stir in broth, bay leaves, thyme, cream, and pepper and bring to boil.
- Add the frozen veggies, cover, reduce heat to low and simmer about 20 minutes or until it thickens.
Dumplings:
Stir salt, baking powder and flour in large bowl.
Stir in cream until mixed in well (dough will be shaggy).
- Bring pot back to a rapid simmer.
- Chop cooked chicken and add to pot.
- Drop ping-pong ball sized dumplings into stew about 1/4 inch apart.
- Reduce burner to low, cover pot and cook until dumplings are twice the size, about 15 to 20 minutes.
