Chicken and Dumplings Recipe
A traditional Chicken and Dumplings Recipe can get very involved and take a lot of time to prepare. So we have provided an easier recipe which still gives you all of the flavor but takes less time to make.
Our family considers this to be one of our favorite comfort foods. Our kids get a big smile on their face when they come home to this easy chicken and dumplings recipe on a cold winter day. Our smallest child is a very finicky eater. Too see him dig in and eat almost all of his dinner makes this recipe a winner in my book. Even if he makes a big mess in the process.
Chicken and Dumplings
Ingredients:
5 cups chicken broth
2 lbs. boneless, skinless chicken breasts
5 tablespoons butter
1 large onion, chopped
1 teaspoon salt
3 garlic cloves - minced
6 tablespoons all-purpose flour
1/3 cup heavy cream
1/2 teaspoon dried thyme
2 bay leaves
1 1/2 cups frozen mixed veggies
Dumplings Mixture
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/3 cups heavy cream
Preparation:
Add chicken broth to a large pot and simmer over high heat.
Add chicken and return to simmer.
Cover, reduce heat to medium-low, and simmer until chicken is just cooked through, about 10 minutes.
Transfer chicken to plate.
Transfer broth to large bowl.
Return empty pot to medium-high heat and melt butter.
Add onion, and salt and cook until softened, about 7 minutes.
Stir in garlic and cook until fragrant, about 30 seconds.
Stir in flour and cook, stirring frequently, for 1 minute.
Stir in 1/4 cup of broth, scraping up browned bits.
Stir in remaining broth, cream, thyme, bay leaves, and pepper and bring to boil. Add the frozen veggies, cover, reduce heat to low and simmer until stew thickens, about 20 minutes.
Dumplings:
Stir flour, baking powder, and salt in large bowl.
Stir in cream until incorporated (dough will be shaggy).
Bring pot back to a rapid simmer.
Chop or Shred cooked chicken and add to pot.
Drop golf ball sized dumplings into stew about 1/4 inch apart.
Reduce heat to low, cover, and cook until dumplings have doubled in size, about 15 to 20 minutes.
Serve.
