Chicken and Rice RecipeHere is a great tasting Chicken and Rice recipe that cooks in one pan. So, not only is this an easy to cook recipe, your clean up time will be a lot faster also.

Using a can of Cream of Chicken Soup really helps to add a lot of flavor to this chicken and rice dinner without all of the work. More involved recipes would have you adding cream, chicken stock and seasonings, then you would have to let it simmer for 20 - 30 minutes to get the right consistency. The combination of canned soup and instant rice really helps to speed things up without sacrificing flavor.

You can also cut up the chicken breasts into bite sized pieces before cooking to make it more like a casserole and if you don't like broccoli, you can always add frozen peas or carrots instead.

 

Chicken and Rice


Ingredients:

  • 1 Tablespoon vegetable oil
  • 4 boneless, skinless - chicken breasts
  • 1 1/2 cups water
  • 1 can Condensed Cream of Chicken Soup
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 2 cups instant white rice (uncooked)
  • 2 cups fresh or frozen broccoli pieces (or vegetable of choice)

 

Preparation:

  1. Heat oil in a large skillet.
  2. Cook both sides of chicken 5 minutes each or until browned.
  3. Remove chicken.
  4. Add water, soup, pepper and paprika.
  5. Heat to a boil.
  6. Stir in broccoli and rice .
  7. Add chicken back to pan.
  8. Dash some more pepper and paprika over chicken.
  9. Cover pan and cook on low for 5 minutes or until chicken is done.
