Chicken and Rice Recipe



Here is a great tasting Chicken and Rice recipe that cooks in one pan. So, not only is this an easy to cook recipe, your clean up time will be a lot faster also.

Using a can of Cream of Chicken Soup really helps to add a lot of flavor to this chicken and rice dinner without all of the work. More involved recipes would have you adding cream, chicken stock and seasonings, then you would have to let it simmer for 20 - 30 minutes to get the right consistency. The combination of canned soup and instant rice really helps to speed things up without sacrificing flavor.

 

Chicken and Rice


Ingredients:

1 tbsp. vegetable oil
4 skinless, boneless chicken breasts
1 1/2 cups water
1 can Condensed Cream of Chicken Soup
1/4 tsp. paprika
1/4 tsp. ground black pepper
2 cups uncooked instant white rice
2 cups fresh or frozen broccoli flowerets

 

Preparation:

Heat oil in skillet. Cook both sides of chicken 5 minutes each or until browned.
Remove chicken.
Add soup, water, paprika and pepper.
Heat to a boil.
Stir in rice and broccoli.
Return chicken to pan.
Sprinkle additional paprika and pepper over chicken.
Cover and cook on low heat 5 min. or until chicken is done.
