Chicken Cacciatore Recipe
Healthy and Hearty Italian Stew
This traditional Chicken Cacciatore Recipe is what we consider to be Italian comfort food. The smell of chicken simmering in tomatoes, onions, garlic and peppers literally makes my mouth water.
Then combine that smell with a big crusty loaf of garlic bread baking in the oven and my stomach is screaming... Food Time!
"Cacciatore" means "hunter" in Italian. Wild mushrooms, onions, tomatoes and garlic could be found by hunters while they were out in the countryside. This "hunter style" dish is enjoyed by Italian food fans all over the world. The best thing about this recipe is that it is easy to make at home with common ingredients.
Chicken Cacciatore
Ingredients:
- 1 whole chicken cut into pieces
- 1/2 tsp Salt and 1/2 tsp Pepper
- 3/4 cup flour
- 1 ( 28 oz.) can diced tomatoes with juice
- 1 large green bell pepper, chopped
- 3 Tbls olive oil
- 1/2 cup of dry red wine
- 1 onion, chopped
- 1 cup of fresh sliced mushrooms
- 14 to 15 ounces of chicken broth
- 1 tsp of basil
- 3 garlic cloves, finely chopped
- 1 tsp of oregano
- 1 pound of spaghetti
- 1/4 cup of fresh chopped parsley
Preparation:
- On a plate or shallow bowl mix Pepper and Salt into flour.
- Coat the chicken in flour on both sides.
- In a large heavy frying pan, heat the Oil over a medium-high heat.
- Add the chicken pieces to the pan and cook until just brown, about 5 minutes per side. If all the chicken does not fit in your pan, then cook it in 2 batches.
- Place chicken in a large pot, add the Diced Tomatoes, Garlic, Chicken, Broth, Red Wine and simmer for 15 minutes.
- Add the green peppers, mushrooms and onions
- Addoregano and basil
- Cover and cook for 30 minutes more.
- Taste sauce to determine if more salt or pepper is needed.
- Boil the Spaghetti during the last 15 minutes so it will be ready when the chicken is.
- Serve chicken and some sauce over the spaghetti on each persons plate and sprinkle with chopped parsley.
