Chicken Lo Mein

 

This pan fried Chicken Lo Mein is a delicious Chinese dish that uses some shortcuts to help get this meal on the table quickly, such as using fast cooking ramen noodles instead of regular pasta, which takes at least 10 minutes to cook. Because they cook so quickly the ramen noodles can be heated in the sauce mixture.

This easy chicken lo mein uses chopped cabbage. You can find cabbage already chopped over by the bags of salad mix in the produce department. It will probably say " Cole Slaw Mix". Fresh Ginger will also be found in the produce department. If you don't want to go to the trouble of buying some just for this dish, then you can use powdered ginger. I don't have a measurement for the powdered version so just add to taste.

Note: When adding corn starch together with other ingredients for the sauce, make sure the liquids are cool. Adding corn starch to warm or hot liquids will clump and cause a big mess. We also recommend using low sodium soy sauce. The regular soy sauce makes this dish too salty.

 

Chicken Lo Mein Recipe


Ingredients:

  • 3 boneless, skinless Chicken Breast halves, cut into bite sized pieces
  • 1/2 cup Soy Sauce (low sodium)
  • 1/4 cup Rice Vinegar 
  • 2 tablespoons Oyster Sauce
  • 1 1/2 tablespoons chopped Fresh Ginger 
  • 1/3 cup sugar 
  • 1 tablespoon cornstarch 
  • 3 1/2 cups water 
  • 4 - packages instant ramen noodles (3-ounce size), throw away
  • seasoning packets
    1 (16-ounce) bag of chopped cabbage. The bag will probably be called "Cole Slaw Mix" 
  • 1 tablespoon vegetable oil 

 

Preparation:

  1. Combine Soy Sauce, Rice Vinegar, Ginger, Oyster Sauce, Sugar, and
  2. Cornstarch in large pot
  3. Heat over medium-high heat, stirring often, until thickened.
  4. Transfer half of mixture to medium bowl for later.
  5. Add water to the pot with half soy sauce mixture and return to boil.
  6. Add ramen noodles and cook, stirring occasionally, until tender, about 4 minutes.
  7. Take pot off heat and stir in chopped cabbage. Cover and keep warm.
  8. Heat oil in large skillet over medium-high heat.
  9. Add chicken and cook until no longer pink and transfer to the bowl with reserved soy sauce mixture and toss to coat.
  10. Transfer noodle and cabbage mixture to platter or individual plates and top with chicken.
