Chicken Marsala Recipe
An Italian Classic
Our family really likes this Chicken Marsala recipe. It is a well loved Italian recipe that's really easy to make. The flavors of lemon, wine and mushrooms combine to make a delicious sauce for chicken.
You can buy Marsala wine in most grocery stores. Be careful not to buy anything labeled "Marsala Cooking Wine", it will most likely have salt in it.
This Chicken Marsala recipe calls for skinless chicken breast that are no thicker than 1/2 inch. These days, when you open a package of chicken breast, there are usually some very large ones in there. The way to get around this is to cut the chicken horizontally across. See this link for cutting chicken breasts. Cutting the chicken this way has the added benefit of giving you an extra piece of chicken to cook. Another solution is to buy Chicken Cutlets. They are thin pieces of chicken breast that are mostly uniform in size.
Recipe For Chicken Marsala
Ingredients:
- 8 boneless, skinless chicken cutlets about 1/2 inch thick
- Salt and Pepper
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 3 tablespoons butter
- 1/2 small onion , chopped fine
- 8 ounces sliced canned mushrooms
- 1 large garlic clove, minced
- 3/4 cup Marsala Wine
- 1/2 cup chicken broth
- 2 teaspoons lemon juice
- 1 tablespoon minced parsley
Preparation:
- Dry chicken with paper towels and season with salt and pepper.
- Dredge chicken in flour to coat.
- Heat 1 tablespoon oil in large nonstick skillet over high heat.
- Add half of the chicken to pan and cook until golden brown on each side.
- Transfer to large plate and cover with aluminum foil.
- Repeat with remaining oil and chicken.
- Heat 1 tablespoon butter in empty skillet over medium-high heat until foaming.
- Cook onion and mushrooms until browned, about 5 minutes.
- Add garlic and cook until fragrant, about 30 seconds.
- Transfer mushroom mixture to medium bowl and cover with foil.
- Add Marsala and broth to skillet, bring to boil over high heat, and cook until reduced to 1/2 cup, about 5 minutes.
- Reduce heat to medium-low, return chicken and any juices to skillet.
- Heat chicken for 1 minute.
- Transfer chicken to individual plates.
- Off heat, whisk in remaining 2 tablespoons butter, lemon juice, parsley, and mushroom mixture. Pour sauce over chicken.
- Serve.
