Mexican Chicken Quesadilla Recipe



Chicken Quesadillas

 

This Chicken Quesadilla recipe is great for meals and snacks for the kids since they get to eat them with their fingers and who doesn't love gooey cheese wrapped up in a warm tortilla and served with sour cream.

Another great thing about them is being able to customize the ingredients. I like green onions in mine and the kids like black olives. It's kind of like making pizza. Just add whatever you like. You can even use a pepper jack cheese along with the cheddar to give it an extra kick.

 

 

As far as the chicken goes, we have used everything from rotisserie to grilled. You can even get pre-cooked chicken at your grocery store. Whenever we make it we always cook extra and freeze it for making Quesadillas or Chicken Tacos.

Tortillas seem to absorb butter really well, so when you are cooking them, make sure there is always enough butter underneath so that it won't burn.

 

 

Chicken Quesadilla Recipe


Ingredients:

These ingredients are for 2 tortillas. You can adjust recipe for more.

  • Two Flour Tortillas
  • One cup Shredded Cheddar Cheese (mild or sharp)
  • One cup cooked chicken
  • Butter or Margarine


  • Optional Ingredients:
  • Chopped Green Onion
  • Sliced Black Olives
  • Chopped Tomato
  • Chopped Jalapenos
  • Chopped Bell Peppers
  • Refried Beans

Serve On The Side:

  • Sour Cream
  • Guacamole
  • Salsa

 

Preparation:

  1. If your cooked chicken was in the refrigerator then warm it up in the microwave for a minute and chop it up into bite sized pieces.
  2. Using a non-stick frying pan melt a tablespoon of butter over medium high heat making sure the butter gets spread all around the pan.
  3. Place a tortilla in the pan and spread 1/2 cup of Cheddar Cheese on one half of tortilla along with the cut up chicken and any other ingredients you want such as chopped green onions, bell peppers, refried beans or sliced black olives.
  4. Fold over the half of tortilla without the toppings and press down a bit with a spatula.
  5. Cook on one side until it turns a golden brown and then turn it over with your spatula.
  6. Lift up a corner of the quesadilla and slip some more butter underneath.
  7. Cook this side until golden brown and remove from the pan to a plate.
  8. Cut the Chicken Quesadilla with a knife or a pizza cutting wheel into managable pieces.
  9. Serve with Sour Cream, Guacamole and Salsa. Here's a tip: If your salsa was in the refrigerator, then put the salsa in a microwave safe container and heat it up before serving. This way you won't be adding cold salsa to your warm Quesadilla.
