Chicken Scampi

This Chicken Scampi Recipe is loaded with creamy, buttery garlic flavors. The ingredient list looks intimidating but once you get going this chicken and pasta dish comes together pretty quickly. It is also a great choice for those who don't like shrimp or lobster scampi. It ends up being less expensive also.

Serve this dish with a salad and some garlic bread and you have a great meal to serve your family.

The word "Scampi" originally refers to a variety of lobster that can be found in the Adriatic and western Mediterranean oceans. In the United States it has come to mean a style of preparation rather than the ingredient, such as this Chicken Scampi recipe.

Chicken Scampi


Ingredients:

4 boneless skinless chicken breast, cut into strips
1/4 cup olive oil
1/2 cup flour
salt and pepper
1 green pepper, cut into strips
1 red pepper, cut into strips
1 yellow onion, chopped
2 teaspoons fresh parsley
grated Parmesan Cheese for topping
16 ounces angel hair pasta or spaghetti

Sauce Ingredients:

3 tablespoons butter
2 tablespoons yellow onion, finely chopped
1/4 cup garlic, minced
1 1/2 cups white wine
1/2 teaspoon salt
1 tsp of dried basil
1 tsp of dried oregano
1/2 teaspoon crushed red pepper
1/4 teaspoon black pepper
2 teaspoons fresh or dried parsley, minced
1 cup heavy cream

 

Preparation:

Start the Pasta:

Get some water boiling and cook the pasta until done while you are cooking chicken.

Make Scampi Sauce:

Using a medium sized pot over medium-low heat. Melt the butter, add the chopped yellow onion and saute for 2 - 4 minutes or until the onion begins to brown. Add the garlic and saute for another 1 minute. Do not let the garlic brown.

Add the wine, salt, dried basil, dried oregano, crushed red pepper and 1/4 teaspoon black pepper, and bring the mixture to a simmer. Cook for 15-18 minutes or until the sauce has reduced by half.

Add 2 teaspoons minced parsley and the heavy cream and simmer, uncovered, for about 10 minutes. Do not let the mixture boil. Take off heat and set aside.

Cook the Chicken:

Heat olive oil in a large skillet over medium heat.
Place the flour into a large bowl. Lightly salt and pepper the chicken pieces, then coat each in the flour.
Place chicken in skillet and cook for 3 minutes on one side, or until golden brown.

When the chicken is brown on one side, flip each piece and move them to the side of the pan. Add sliced sweet peppers and red onion to the center of skillet.
Continue cooking the chicken and vegetables for 4-6 minutes, or until the chicken is browned and the vegetables are beginning to brown on the edges.

Pour sauce over the chicken and other ingredients in skillet.
(Note: if your skillet is already full, then put the cooked chicken mixture into a large pot and then add the sauce. You will also be adding the pasta).
Add the pasta to skillet or pot, then toss everything a bit and continue to cook for a couple of minutes.

Prepare each dish by placing equal amounts of pasta onto each of 4 plates.
Use a spoon or tongs to add peppers and onion on top of each pile of pasta.
Arrange equal amounts of chicken onto the center of the pasta.

Sprinkle each plate with about 1/2 teaspoon minced parsley and grated parmesan cheese.
