Chicken Waldorf Salad

chicken waldorf salad on a plateChicken Waldorf Salad is basically chicken added to a traditional Waldorf salad. Adding chicken makes this more of a meal than just a salad. The tangy flavors of the orange zest combine with the sweetness of raisins, apples and mayonnaise to produce a delicious lunch or dinner.

My mother in law always makes this for her bridge club that meets once a month. Everyone always looks forward to eating this salad. We noticed that one of the ladies showed up late one day and missed out on getting to eat some. Now she shows up early each month. My mother in law makes sure to set some aside for her to take home. We are pretty sure she doesn't cook much due to her arthritis.

We have substituted pecans for walnuts in our recipe because we prefer the sweeter taste of pecans. We have also added orange juice and orange zest to give it a nice tangy flavor.

This is a light and delicious recipe for a warm summer day. You can put some in a pita with some veggies, put a large scoop on a garden salad or just eat it the way it is.

You can add dried cranberries in place of the raisins for a more colorful dish and if you are looking to make this a meal you can eat on a diet, then substitute low fat yogurt for the mayonnaise.

 

Chicken Waldorf Salad Recipe


Ingredients:

  • 1/2 cup raisins   
  • 1 tablespoon grated zest from 1 large orange
  • Squeeze 1/4 cup of orange juice from the orange
  • 2/3 cup Mayonnaise 
  • 3 cups shredded cooked chicken 
  • 1 large sweet apple cored and chopped
  • 1 large rib celery  chopped
  • 3/4 cup Pecans  toasted and chopped

 

Preparation:

  1. Stir raisins and orange juice together in bowl and let raisins plump for 10 minutes.
  2. Mix orange zest and mayonnaise together in separate bowl.
  3. Toss chicken, apple, celery, and pecans in large bowl.
  4. Add raisin and mayonnaise mixtures and toss until coated.
  5. Season with salt and pepper to taste.
  6. Serve over lettuce or put in some bread for a sandwich
