Chicken Waldorf Salad
My mother in law always makes this for her bridge club that meets once a month. Everyone always looks forward to eating this salad. We noticed that one of the ladies showed up late one day and missed out on getting to eat some. Now she shows up early each month. My mother in law makes sure to set some aside for her to take home. We are pretty sure she doesn't cook much due to her arthritis. We have substituted pecans for walnuts in our recipe because we prefer the sweeter taste of pecans. We have also added orange juice and orange zest to give it a nice tangy flavor. This is a light and delicious recipe for a warm summer day. You can put some in a pita with some veggies, put a large scoop on a garden salad or just eat it the way it is. You can add dried cranberries in place of the raisins for a more colorful dish and if you are looking to make this a meal you can eat on a diet, then substitute low fat yogurt for the mayonnaise.
