Delicious Creamy Chicken with a Crunchy Topping

 

Creamy Chicken CasseroleCreamy Chicken Casserole is an easy weeknight meal for families on the go. Our family devours this meal whenever I make it.

You can cook your own chicken for this recipe or buy pre-cooked chicken at your grocery store. Perdue sells carved chicken breast meat. It goes by the name "Short Cuts" We have also used a rotisserie chicken from the store.

You can always tweak this recipe to suit to your tastes. Sometimes I add a can of sliced mushrooms or to make this dish go further I boil some small bow tie pasta and add it into the chicken mixture. You can also add some shredded cheese into the mixture before baking or sprinkle some parmesan cheese on top.

Our youngest son adds his own flavor enhancer's once he gets his plate. Basically, he puts ketchup on everything. But this is just a phase...right? I have these awful visions of him putting ketchup on prime rib at his wedding reception. Ugghh.

 

Chicken Casserole Recipe


Prep Time: 15 min

Cook Time: 30 min

Ingredients:

  • 3 cups cooked chicken breast cut into small pieces
  • 1 can of condensed cream of chicken soup
  • 8 ounces sour cream
  • salt & pepper
  • 1 1/2 cups Ritz crackers (crushed)
  • 1/4 cup butter, melted

 

Preparation:

  1. Preheat oven to 350 degrees
  2. Combine first 3 ingredients into a 11x7 baking dish.
  3. Add salt and pepper to taste
  4. Mix butter and crushed crackers in a bowl
  5. Distribute over chicken mixture.
  6. Bake uncovered for 30 minutes.
