Curry Chicken Salad
This Curry Chicken Salad has a delicious blend of spices that really makes this recipe come to life. We like to stuff it into a pita with some tomatoes and lettuce for a tasty lunch.
We used to make a standard recipe and then add a tablespoon of curry powder. The recipe below takes this to a new level by adding lime juice, cumin and coriander, which gives it a whole new flavor combination for your taste buds to enjoy.
This recipe can be expanded to include diced apples, sliced grapes, pineapple chunks or any other fruit or nut you would like to add.
Curry Chicken Salad Recipe

Chicken Cook Time: 20 min
Ingredients:
- 2/3 cup mayonnaise
- 1 tablespoon lime juice
- 1 1/2 tablespoons curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 3 cups cooked chicken chopped into bite sized pieces
- 1 large rib celery, chopped
- 1/2 medium onion, chopped fine
- 1 cup raisins or dried cranberries (or both)
- 1/2 cup toasted pecans chopped
Preparation:
- Mix mayonnaise, lime juice, curry powder, cumin, and coriander in bowl.
- Put chicken, celery, onion, raisins, and pecans together in bowl.
- Add mayonnaise mixture and toss until coated.
- Season with salt and pepper to taste.
- Serve right away or cover and refrigerate.
