Lemon Chicken Recipe

Tender Chicken in a Zesty Lemon Sauce

 

lemon chickenThis is a classic American Lemon Chicken Recipe that gives a tasty flavor combination of lemons and garlic. It's made with boneless skinless chicken breasts cut up into 1 inch strips. Most packaged chicken breast will usually contain one or two large breasts.

There are many lemon chicken recipes out there and the baked lemon chicken version is probably the most popular. Since this recipe is in the quick and easy section, you will be cooking it in a frying pan to help speed things up. We sometimes serve this dish over pasta like in the photo.

 

 

Lemon Chicken


Prep time: 15 min

Cook time: 20 min

Ingredients:

  • 1 1/2 pounds boneless skinless chicken breast
  • 1/4 cup lemon juice (about two lemons)
  • 2 Tbls vegetable oil 
  • 3 Tbls butter 
  • 3 minced garlic cloves
  • Salt and pepper 
  • 1 Tbls flour 
  •  2 Tbls minced parsley 
  • 1 cup chicken broth

 

Preparation:

  1. Cut chicken into 1/2 inch strips. (If the chicken breasts are very thick, then slice them in half horizontally first.)
  2. Blot chicken with paper towels to dry them and sprinkle with pepper and salt.
  3. Heat 1 Tbls oil in a large nonstick frying pan over medium-high heat.
  4. Unless your frying pan will hold all of the chicken; Cook half of chicken on both sides until light brown and thoroughly cooked.
  5. Transfer to plate and cover with foil; repeat with remaining oil and chicken.
  6. Add 1 Tbls butter and the minced garlic to empty pan and heat for about 30 seconds.
  7. Add flour to the pan and cook until it begins to brown, about 30 more seconds.
  8. Pour in broth and lemon juice, scrape up any brown bits and simmer until it starts to get thick.
  9. Take the pan off the heat and mix in parsley and remaining butter.
  10. Stir in cooked chicken along with any juices from the plate and season with salt and pepper.
