Chicken Jambalaya Baked With Drumsticks

 

Oven Baked Jambalaya with ChickenOven Baked Jambalaya is a delicious way to bake chicken especially if you like drumsticks with a spicy kick to them. You could also make this recipe with chicken thighs if you prefer.

This recipe can be as spicy as you want since you can control the amount of heat by adding more or less Cayenne pepper and hot sauce.

Our kids don't like too much spice so I make this recipe as it's listed here, then my husband can add as much hot sauce as he wants to his individual plate. He adds so much of it I think he's going to catch fire one day.

 

 

 

Oven Baked Jambalaya Recipe


Prep Time: 15 min

Cook Time: 55 min

Ingredients:

  • 1 package Chicken Drumsticks (about 1 1/2 pounds)
  • Cooking Oil Spray
  • 1 cup celery, diced
  • 1 cup red bell pepper, diced
  • Cayenne pepper
  • 1 cup long grain rice (enriched)
  • 1/3 cup green onion, minced (use the whole stalk)
  • 14 oz. chicken broth
  • 2 tsp hot sauce (such as Texas Pete)

 

Preparation:

  1. Preheat your oven to 350°F.
  2. In a nonstick medium frying pan, brown the drumsticks at medium-high heat.
  3. While those are cooking, spray a 2-quart casserole dish with Cooking Oil Spray
  4. Add chicken broth, hot sauce, rice, diced bell pepper, celery, and onion to the casserole dish.
  5. When drumsticks have been browned, remove pan from heat and sprinkle lightly with cayenne pepper.
  6. Lay browned drumsticks over rice mixture.
  7. Cover the dish with foil and bake for 45 to 60 minutes. Rice should be cooked and chicken drumsticks should have an internal temperature of 180°F.
