oven fried chickenCooking fried chicken in oil can be a mess but this Oven Fried Chicken Recipe is a great way to get fried chicken taste using your oven for cleaner and healthier cooking.

The chicken is breaded with Panko style bread crumbs, (they are Japanese in origin). The chicken is suspended on a flat wire rack to cook so that the bottoms don't get soggy. As you can see from the oven fried chicken picture to the right that the chicken comes out of the oven with a nice crispy coating.

The oil that you add to the bread crumbs will act as a binding agent to help them adhere to the chicken.

 

Oven Fried Chicken


Prep time: 20 min

Cook time: 40 min

Ingredients:

  • 1 whole chicken cut into pieces with skin removed
  • 2 tablespoons vegetable oil
  • 1 cup Panko Style bread crumbs
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 Tbls Dijon mustard
  • 1 tsp dried thyme
  • 2 large eggs
  • 1 tsp table salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp garlic powder

 

Preparation:

  1. Put oven rack at upper-middle position and heat oven to 400 degrees.
  2. Line baking pan with foil and put flat wire rack over it.
  3. Drizzle vegetable oil over Panko bread crumbs in a shallow dish or small bowl; stir until crumbs are coated.
  4. Mix mustard, salt, pepper, eggs, oregano, thyme, garlic powder, and cayenne in a second shallow dish.
  5. Coat chicken, one piece at a time with egg mixture.
  6. Put chicken in Panko crumbs, press into chicken pieces on all sides.
  7. Tap off excess crubms and place on the rack.
  8. Bake until chicken is brown, about 40 minutes, and juices run clear
