Barbeque Chicken Recipe
Ingredients:
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 pounds bone-in, skin-on chicken pieces
- A bottle of your favorite bbq sauce (poured into a cup for easier access)
- Brush for sauce
- Instant read thermometer
Preparation:
- Preheat oven to 350 degrees F
- Trim pieces of any large clumps of fat that is hanging over the edges
- Sprinkle salt and pepper all over chicken pieces.
- Place chicken pieces in a large baking dish or two smaller baking dishes, whatever works to hold all of the chicken.
- Place chicken in oven and cook for 1/2 hour.
- Preheat gas grill to a medium heat. If you are using a charcoal grill then you will need to start your coals during the time you are cooking the chicken so that it will be ready to go.
- Take your chicken out to the grill and cook them turning every 5 minutes until they are turning a golden brown, we usually close the lid on our gas grill in between turning the chicken.
- At this point you can start brushing barbeque sauce onto the chicken and then flipping them over and brushing the other side.
- Keep adding sauce and turning chicken for about 20 minutes. The chicken will start to get a nice thick coating of sauce and some of it will carmelize and get crunchy.
- If your grill starts to flare up then move the chicken out of the way of the flame until it dies down.
- Cook until the internal temperature of breast meat registers 165 degrees.
- We use an instant read thermometer for this.
