BBQ Chicken Rub

 

Ingredients:

  • 1/2 cup brown sugar
  • 3/4 cup Paprika
  • 1/4 cup celery salt
  • 1/4 cup black pepper
  • 2 tablespoons onion powder
  • 1 tablespoon lemon pepper
  • 2 tablespoons dry mustard powder
  • 2 tablespoons chili powder
  • 1/2 Teaspoon cayenne

 

Preparation:

  1. Mix dry ingredients together in a small sealable container or an empty spice shaker.
  2. Make sure the chicken is dry. Pat the pieces down with paper towels if necessary.
  3. Rub the spices into the chicken, making sure to get the rub into the all parts of the chicken.
  4. Let rub sit on the chicken for anywhere from 3 hours to overnight in the refrigerator.
  5. Bake the chicken in the oven first if you want to give it a head start. Otherwise, put it on a pre-heated grill and cook until the the internal temperature of the chicken reaches180 degrees F for all parts except the breasts. The breast meat should reach 165 degrees F when measured with an instant-read thermometer.
  6. When chicken is almost finished grilling, baste both sides with a generous amount of barbecue sauce.
