Blackened Chicken Recipe
Ingredients:
- Cast Iron pan
- 3-4 boneless skinless chicken breasts
- 1/2 cup Melted Butter
- Cajun Seasoning (Store bought or Home made)
- Vegetable Oil
Marinade:
- 2 cups Water
- 2 tablespoons of Soy Sauce
- 4 tablespoons Lime juice
- 1 tablespoon of Worcestershire Sauce
Preparation:
- Place the marinade ingredients and chicken into a sealable plastic bag and marinate for two hours. Best if left over night.
- If you are using thick pieces of chicken then pre-heat your oven to 350 degrees.
- If you have pounded or sliced the chicken to 1/2 inch thickness then it will most likely cook all the way through in the skillet.
- Remove chicken from bag and pat dry with paper towels.
- Melt butter in the microwave and coat the chicken pieces with it.
- Sprinkle the Cajun Seasoning over both sides
- Heat your Cast Iron Skillet on medium high heat and add a couple tablespoons of Vegetable Oil
- Cook the chicken breasts on each side until they have a nice caramelized black coating and remove to a baking dish.
- Check the interior temperature of your chicken. If it hasn't reached 160 degrees then finish cooking it in the oven.
