Cajun Chicken Pasta

 

Ingredients:

  • 2 skinless, boneless skinless chicken breast halves, cut into bite size pieces
  • 2 Tsp cajun seasoning
  • 2 Tbsp butter or margarine
  • 1/4 green bell pepper sliced into strips
  • 1 cup frozen peas (defrosted)
  • 1/4 red bell pepper sliced into strips
  • 1/2 pound of mushrooms
  • 1 green onion, sliced
  • 1- cup heavy cream or more if you like it extra creamy
  • 1/4 Tsp dried basil
  • 1/4 Tsp lemon-pepper seasoning
  • 1/4 Tsp salt
  • 1/8 Tsp garlic powder
  • 1/8 Tsp pepper
  • 4 ounces cooked Rigatoni pasta
  • Chopped Parsely
  • Grated parmesan cheese 



 

Preparation:

  1. Place Cajun seasoning and chicken in a ziploc plastic bag, shake to coat.
  2. In a large skillet over medium heat cook chicken in butter for 5-7 minutes or until almost tender.
  3. Add peppers, mushrooms, peas and onion; cook and stir for 2-3 minutes.
  4. Reduce heat.
  5. Add cream and seasonings continue cooking until hot.
  6. Add cooked pasta and toss continue cooking until hot.
  7. Sprinkle with Parmesan cheese and Parsely.
