Cajun Chicken Pasta
Ingredients:
- 2 skinless, boneless skinless chicken breast halves, cut into bite size pieces
- 2 Tsp cajun seasoning
- 2 Tbsp butter or margarine
- 1/4 green bell pepper sliced into strips
- 1 cup frozen peas (defrosted)
- 1/4 red bell pepper sliced into strips
- 1/2 pound of mushrooms
- 1 green onion, sliced
- 1- cup heavy cream or more if you like it extra creamy
- 1/4 Tsp dried basil
- 1/4 Tsp lemon-pepper seasoning
- 1/4 Tsp salt
- 1/8 Tsp garlic powder
- 1/8 Tsp pepper
- 4 ounces cooked Rigatoni pasta
- Chopped Parsely
- Grated parmesan cheese
Preparation:
- Place Cajun seasoning and chicken in a ziploc plastic bag, shake to coat.
- In a large skillet over medium heat cook chicken in butter for 5-7 minutes or until almost tender.
- Add peppers, mushrooms, peas and onion; cook and stir for 2-3 minutes.
- Reduce heat.
- Add cream and seasonings continue cooking until hot.
- Add cooked pasta and toss continue cooking until hot.
- Sprinkle with Parmesan cheese and Parsely.
