Chicken and Dumplings Recipe

 

Ingredients:

  • 5 cups chicken broth 
  • 2 lbs. skinless, boneless, chicken breasts
  • 5 Tbls butter 
  • 1 large chopped onion
  • 1 tsp salt 
  • 3 minced garlic cloves
  • 6 Tbls all-purpose flour 
  • 1/3 cup heavy cream 
  • 1/2 tsp dried thyme 
  • 2 bay leaves 
  • 1 1/2 cups frozen mixed veggies

Dumplings Mixture

  • 2 cups  flour 
  • 1 Tbls baking powder 
  • 1/2 tsp salt 
  • 1 1/3 cups heavy cream 



 

Preparation:

  1. Add chicken broth to a large pot and cook over high heat.
  2. Add chicken and bring to simmer.
  3. Cover and continue to simmer about 10 minutes or until chicken is cooked through.
  4. Transfer chicken to a plate.
  5. Transfer broth to a bowl.
  6. Return empty pot to medium-high heat and melt 5 Tbls butter.
  7. Add onion and salt, cook until onions are soft, about 7 minutes.
  8. Mix in garlic and cook until fragrant, about 30 seconds.
  9. Mix in flour and stir for 1 minute.
  10. Stir in broth, bay leaves, thyme, cream, and pepper and bring to boil.
  11. Add the frozen veggies, cover, reduce heat to low and simmer about 20 minutes or until it thickens.

 

Dumplings:

Stir baking powder, flour and salt in large bowl.
Stir in cream until incorporated (dough will be shaggy).

    1. Bring pot back to a rapid simmer.
    2. Chop cooked chicken and add to pot.
    3. Drop ping-pong ball sized dumplings into stew about 1/4 inch apart.
    4. Reduce heat to low, cover pot and cook until dumplings have become twice the size, about 15 to 20 minutes.
