Chicken Cacciatore Recipe
Ingredients:
- 1 whole chicken cut into pieces
- 1/2 tsp Salt and 1/2 tsp Pepper
- 3/4 cup flour, for dredging
- 3 tablespoons olive oil
- 1 ( 28-ounce) can diced tomatoes with juice
- 1 large green bell pepper, chopped
- 1 onion, chopped
- 1 cup of fresh sliced mushrooms
- 1 15oz can of chicken broth
- 1/2 cup of dry red wine
- 3 garlic cloves, finely chopped
- 1 tsp of dried oregano
- 1 tsp of dried basil
- 1 pound of spaghetti
- 1/4 cup of fresh parsley chopped
Preparation:
- Mix Salt and Pepper into the flour.
- Dredge the chicken in the flour.
- In a large heavy frying pan, heat the Oil over a medium-high heat.
- Add the chicken pieces to the pan and cook just until brown, about 5 minutes per side. If all the chicken does not fit in your pan, then cook it in 2 batches.
- Place chicken in a large pot and add the Diced Tomatoes, Garlic, Chicken Broth, Red Wine and cook for about 15 minutes.
- Add the mushrooms, green peppers and onions
- Add basil and oregano.
- Cover and cook for around 30 minutes more.
- Taste sauce to determine if more salt or pepper is needed.
- Boil the Spaghetti during the last 15 minutes so it will be ready when the chicken is.
- Serve chicken and some sauce over the spaghetti on each persons plate and sprinkle with chopped parsley.
