Chicken Cacciatore Recipe

 

Ingredients:

  • 1 whole chicken cut into pieces
  • 1/2 tsp Salt and 1/2 tsp Pepper
  • 3/4 cup flour, for dredging
  • 3 tablespoons olive oil
  • 1 ( 28-ounce) can diced tomatoes with juice
  • 1 large green bell pepper, chopped
  • 1 onion, chopped
  • 1 cup of fresh sliced mushrooms
  • 1 15oz can of chicken broth
  • 1/2 cup of dry red wine
  • 3 garlic cloves, finely chopped
  • 1 tsp of dried oregano
  • 1 tsp of dried basil
  • 1 pound of spaghetti
  • 1/4 cup of fresh parsley chopped



 

Preparation:

  1. Mix Salt and Pepper into the flour.
  2. Dredge the chicken in the flour.
  3. In a large heavy frying pan, heat the Oil over a medium-high heat.
  4. Add the chicken pieces to the pan and cook just until brown, about 5 minutes per side. If all the chicken does not fit in your pan, then cook it in 2 batches.
  5. Place chicken in a large pot and add the Diced Tomatoes, Garlic, Chicken Broth, Red Wine and cook for about 15 minutes.
  6. Add the mushrooms, green peppers and onions
  7. Add basil and oregano.
  8. Cover and cook for around 30 minutes more.
  9. Taste sauce to determine if more salt or pepper is needed.
  10. Boil the Spaghetti during the last 15 minutes so it will be ready when the chicken is.
  11. Serve chicken and some sauce over the spaghetti on each persons plate and sprinkle with chopped parsley.
