Crispy Baked Chicken

 

Ingredients:

  • 1/4 cup vegetable oil
  • 1 box Melba toast
  • 2 large eggs
  • 1 Tbls Dijon mustard
  • 1 tsp dried thyme
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1 whole chicken cut into pieces with the skin removed

 

 

Preparation:

  1. Preheat oven to 400 degrees
  2. Put oven rack to upper-middle position.
  3. Put Melba toast into a large ZipLoc bag and crush into small crumbs with a heavy kitchen utensil such as a rolling pin or crush it using your blender or food processor.
  4. Pour vegetable oil over Melba toast crumbs in bag and shake well.
  5. Line cookie sheet with foil and set large flat wire rack over it.
  6. Pour oil coated Melba crumbs into shallow dish.
  7. Mix eggs, oregano, garlic powder, thyme, mustard, salt, pepper in a second shallow dish or small bowl.
  8. Dip each piece of chicken in egg mixture and cover both sides.
  9. Put chicken in bowl with Melba crumbs, sprinkle crumbs over chicken. Press to coat both sides of chicken pieces.
  10. Shake off excess and place on the rack that is sitting in sheet pan.
  11. Bake until chicken is brown and juices run clear, about 40 minutes.
