Garlic Chicken

 

Ingredients:

  • 1 1/4 cup vegetable oil 
  • 4 garlic cloves, minced, and 6 cloves peeled and mashed
  • 6 boneless, skinless chicken breast  (around 1 1/4 pounds)
  • 1 cup bread crumbs
  • 1 cup all-purpose flour 
  • 3 large egg whites 
  • 1 tablespoon garlic powder 
  • 4 tablespoons cornstarch 
  • Salt and pepper 

 

 

Preparation:

  1. Adjust oven rack to middle position and preheat oven to 200 degrees.
  2. Combine 3 tablespoons oil, minced garlic, and chicken breasts in zip-lock bag. Keep in refrigerator while you are preparing other ingredients.
  3. Spread flour in a plate.
  4. In a small bowl, whisk egg whites until foamy.
  5. Combine bread crumbs, garlic powder, and cornstarch in third plate.
  6. Remove chicken from bag and season with salt and pepper.
  7. Coat chicken, one at a time, lightly with flour, dip in egg whites, then dredge in crumbs pressing down to get crumbs to stick to chicken.
  8. Heat 1/2 cup oil and 3 smashed garlic cloves in large nonstick skillet over medium heat until garlic is lightly browned, about 4 minutes.
  9. Take out garlic and fry 3 pieces of chicken until crisp and deep golden, about 2 minutes per side.
  10. Transfer to paper towel-lined plate and place in warm oven.
  11. Discard oil, wipe out skillet with a big wad of paper towels, and repeat steps 8 - 10 with the rest of the chicken.
