Garlic Chicken
Ingredients:
- 1 1/4 cup vegetable oil
- 4 garlic cloves, minced, and 6 cloves peeled and mashed
- 6 boneless, skinless chicken breast (around 1 1/4 pounds)
- 1 cup bread crumbs
- 1 cup all-purpose flour
- 3 large egg whites
- 1 tablespoon garlic powder
- 4 tablespoons cornstarch
- Salt and pepper
Preparation:
- Adjust oven rack to middle position and preheat oven to 200 degrees.
- Combine 3 tablespoons oil, minced garlic, and chicken breasts in zip-lock bag. Keep in refrigerator while you are preparing other ingredients.
- Spread flour in a plate.
- In a small bowl, whisk egg whites until foamy.
- Combine bread crumbs, garlic powder, and cornstarch in third plate.
- Remove chicken from bag and season with salt and pepper.
- Coat chicken, one at a time, lightly with flour, dip in egg whites, then dredge in crumbs pressing down to get crumbs to stick to chicken.
- Heat 1/2 cup oil and 3 smashed garlic cloves in large nonstick skillet over medium heat until garlic is lightly browned, about 4 minutes.
- Take out garlic and fry 3 pieces of chicken until crisp and deep golden, about 2 minutes per side.
- Transfer to paper towel-lined plate and place in warm oven.
- Discard oil, wipe out skillet with a big wad of paper towels, and repeat steps 8 - 10 with the rest of the chicken.
