King Ranch Chicken
Ingredients:
- 4 skinless, boneless chicken breast halves (cooked and cut into bite sized pieces)
- 1 package tortilla chips
- 1 can Ro-Tel tomatoes
- 1 can condensed cream of chicken soup
- 1 can condensed cream of celery soup
- 1 small onion, chopped
- 3 cups shredded Cheddar cheese
Preparation:
- Preheat oven to 300 degrees F
- Cook chopped onion in a pan with some olive oil until soft
- Layer the chips in a 9x13 inch casserole dish.
- Combine Ro-Tel tomatoes, celery soup, chicken soup and onion.
- Pour half of mixture over chips.
- Layer the chicken pieces, half of the cheese and the remaining soup mixture.
- Bake at 300 degrees F for 20 minutes.
- Top with the remaining cheese and return to the oven until the cheese is melted.
