Lemon Chicken Recipe
Ingredients:
- 1 1/2 pounds boneless skinless chicken breast
- Salt and pepper
- 2 tablespoons vegetable oil
- 3 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 tablespoon flour
- 1 cup chicken broth
- 1/4 cup lemon juice (about two lemons)
- 2 tablespoons minced parsley
Preparation:
- Cut chicken into 1/2 inch strips. (If the chicken breasts are very thick, then slice them in half horizontally first.)
- Pat chicken dry with paper towels and season with salt and pepper.
- Heat 1 tablespoon oil in large nonstick skillet over medium-high heat.
- Cook half of chicken until golden brown and cooked through, about 2 minutes per side.
- Transfer to plate and cover with foil; repeat with remaining oil and chicken.
- Add 1 tablespoon butter and the minced garlic to empty skillet and cook about 30 seconds.
- Stir in flour and cook until beginning to brown, about 30 seconds.
- Stir in broth and lemon juice, scrape up any brown bits and simmer until slightly thickened, about 3 minutes.
- Take the pan off the heat and whisk in parsley and remaining butter.
- Stir in browned chicken along with any juices from the plate and season with salt and pepper.
