Lemon Chicken Recipe

 

Ingredients:

  • 1 1/2 pounds boneless skinless chicken breast
  • Salt and pepper 
  • 2 tablespoons vegetable oil 
  • 3 tablespoons unsalted butter 
  • 3 garlic cloves, minced
  • 1 tablespoon flour 
  • 1 cup chicken broth 
  • 1/4 cup lemon juice (about two lemons)
  • 2 tablespoons minced parsley 



 

Preparation:

  1. Cut chicken into 1/2 inch strips. (If the chicken breasts are very thick, then slice them in half horizontally first.)
  2. Pat chicken dry with paper towels and season with salt and pepper.
  3. Heat 1 tablespoon oil in large nonstick skillet over medium-high heat.
  4. Cook half of chicken until golden brown and cooked through, about 2 minutes per side.
  5. Transfer to plate and cover with foil; repeat with remaining oil and chicken.
  6. Add 1 tablespoon butter and the minced garlic to empty skillet and cook about 30 seconds.
  7. Stir in flour and cook until beginning to brown, about 30 seconds.
  8. Stir in broth and lemon juice, scrape up any brown bits and simmer until slightly thickened, about 3 minutes.
  9. Take the pan off the heat and whisk in parsley and remaining butter.
  10. Stir in browned chicken along with any juices from the plate and season with salt and pepper.
