Delicious Roasted Chicken Thighs With Fruit Salsa

Roast Chicken Thighs with fruit salsa are one of my daughters favorite meals. Of course, she eats a lot more of the salsa than chicken. I have learned to double up on the amount of fruit salsa when making this dish.
We caught our little one shoveling the bowl of salsa into his mouth when we weren't looking. He is a sneaky one. I suppose from now on I will have to spoon some onto each plate and keep the bowl on the counter.
The chicken is roasted in the oven, it comes out very tender and pairs well with the fruit salsa.
Roast Chicken Thigh Recipe
Prep Time: 30 min
Cook Time: 20 min
Ingredients:
- 8 chicken thighs with bone and skin
- 1 tsp salt
- 1 tsp paprika
- 1 tsp black pepper
- 1 Tbls olive oil
Fruit Salsa:
- 3 finely diced ripe pears
- 4 ripe finely diced plums
- 1/4 cup finely chopped red onion
- 1/2 cup finely diced red bell pepper
- 1/4 cup dried cranberries
- 3 Tbls chopped basil
- 1 Tbls olive oil
- 1 tsp sugar
- 1 Tbls balsamic vinegar
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
Preparation:
- Preheat oven to 375 F.
- Mix salt and pepper, chicken thighs, olive oil and paprika in a bowl
- Place chicken thighs skin side down in large roasting pan.
- Cook for 20 minutes at 375 F.
- Flip thighs over skin side up and cook until chicken is cooked through; about another 20 minutes.
- While they are cooking make Fruit Salsa by adding all ingredients in medium size bowl.
- Stir and set aside, keeping the salsa at room temperature.
- Taste the salsa for flavor and adjust with spices to suit your taste.
- Place the cooked thighs on large plate or platter.
- Serve salsa on the side in a bowl
