Sesame Chicken Recipe

Sesame Chicken

This is an excellent Sesame Chicken recipe. Many flavors blend together for a great tasting meal. My husband always says our house smells like a Chinese restaurant when I am cooking this dish.

One of the secret ingredients in this recipe is baking soda. It's added to the marinade which tenderizes the chicken, keeping it moist and juicy.

You will notice that the chicken in this Sesame Chicken recipe doesn't have a crunchy outside. Most Americanized Chinese restaurants batter and deep fry their chicken to appeal to American tastes. We feel it's not necessary to batter-fry the chicken in this version.

Sesame Chicken

Main Ingredients:

3 boneless, skinless chicken breasts cut into 1 inch pieces
Peanut Oil for frying chicken
2 Tablespoons Sesame Seeds
2 Stalks of chopped green onion

Marinade Ingredients:

2 tablespoons soy sauce
1 tablespoon dry sherry
3 drops sesame oil
1 clove minced garlic
2 tablespoons water
1 teaspoon vegetable oil
1/4 teaspoon baking soda

Sauce Ingredients:

1/2 cup water
1 cup chicken broth
3 Tablespoons white vinegar or rice wine vinegar
1/4 cup cornstarch
1/4 cup brown sugar
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon chili paste or hot pepper flakes
1 clove minced garlic

Preparation:

Cut the chicken into 1-inch cubes.
Mix the marinade ingredients and marinate the chicken for 20 minutes.
We put the marinade and chicken in a ziploc bag and get most of the air out.

To prepare the sauce:

Mix together all of the sauce ingredients except for the Corn Starch.
Pour them into a small pot and bring to a boil, stirring continuously.
Mix corn starch with 1/4 cup of cool water
Add Corn Starch/Water mixture into the sauce and stir until blended.
Turn the heat down to low and keep warm while you are cooking the chicken.

To cook the chicken:

Heat an inch of peanut oil in a large skillet
Add the marinated chicken pieces a few at a time into the skillet, and cook until golden brown.
Transfer the cooked chicken to a plate.
Repeat with the remainder of the chicken.
Just before you are finished cooking the chicken, bring the sauce back up to a boil.

Place the chicken on a large platter or bowl and pour the sauce over.
Sprinkle with sesame seeds and green onion.
Serve the Sesame Chicken over rice.
