Shoyu Chicken
A Delicious Hawaiian Chicken Recipe
Shoyu Chicken is a delicious dish found all over the Hawaiian islands. It combines the flavors of orange, brown sugar, ginger and five spice to produce a wonderful sauce for chicken. Shoyu is Japanese for Soy Sauce.
It has been our experience with this recipe that using low salt soy sauce helps bring out more of the spice flavors. The regular kind was a bit too salty for this dish.
This recipe uses Mirin, which is a Japanese condiment used in many dishes. I would describe it as a sweet rice wine. If you don't want to go out and buy some just for this dish, then you can skip this ingredient.
Shoyu Chicken Recipe

Cook time: 30 min
Ingredients:
- 2 pounds boneless, skinless chicken thighs
- 1 cup low salt soy sauce
- 1/2 cup mirin
- 1 orange juiced
- 1 Tbls of zest from orange
- 1/4 cup brown sugar
- 1 clove garlic minced
- 1 1/2 tsps fresh ginger, minced
- 1/2 tsp Chinese Five Spice
- 1 Tbls cornstarch
- Sesame Seeds for topping
Preparation:
- Combine the Mirin, Soy Sauce, Brown Sugar, Orange Juice, Orange Zest, Minced Garlic, Minced Ginger, Five Spice Powder, and 1/2 cup water in a medium pot.
- Bring to a boil.
- Add the Chicken, cover tightly, and lower heat to a simmer.
- Cook the chicken thighs 15–20 min. or until cooked through. Turn once during cooking.
- Remove the chicken from the pot and transfer to a plate
- Put a heat resistant measuring cup in your sink and pour the sauce from the pot through a screen or sifter so that the pieces of garlic and ginger are filtered out.
- You should end up with one cup of sauce. Pour the rest down the sink.
- Pour the sauce back into the pot.
- Mix 1 tablespoon cornstarch with 2 tablespoons cool water until dissolved.
- Mix the cornstarch mixture into sauce in the pot, and bring up the heat to thicken into a glaze. You can repeat this step if you want a thicker sauce.
- Slice the chicken into bite size pieces or strips if you prefer
- Serve chicken over rice and spoon on some glaze
- Sprinkle with Sesame Seeds.
