Sweet and Sour Chicken
This is a delicious Chinese sweet and sour recipe
Sweet and Sour Chicken is a simple recipe that can be found in any Chinese restaurant. Our family loves the flavor combination of sweet and sour and this dish is easy to make, despite the lengthy ingredient list.
Bite sized chicken with a crunchy coating is covered in a sauce where the flavors of sweet plum sauce and ketchup are complimented by rice vinegar. Hot chili sauce is also added to bring a bit of spice to this recipe.
This recipe is for two people. You will need to double it for a family sized meal. Start some rice so it will be done when you are ready to serve.
One of the secrets of this dish is to add a small amount of baking soda to the batter. This will help the coating on the chicken come out crisp and crunchy.
The vegetables you can use are unlimited. The usual veggie for this dish is bell pepper but I like to add fresh "in season" veggies when I can find them. The last time I made this I had some broccoli and fresh mushrooms on hand, so they were added along with the bell pepper.
Sweet and Sour Chicken Recipe
Prep time: 30 min
Cook time: 20 min
Main Ingredients:
- 2 skinless, boneless chicken breast halves (cut into bite-size pieces)
- 1 green or red bell pepper, cut into squares
- 1 green onion stalk (cut into 1-inch pieces)
- 2 cloves finely chopped garlic
- Oil for frying
Batter:
- 4 Tbls corn starch
- 4 Tbls flour
- 1/2 cup water
- 1/2 tsp baking soda
Sauce Ingredients:
- 3 Tbls ketchup
- 1/2 tsp Worcestershire sauce
- 1 Tbls hot chili sauce
- 2 Tbls plum sauce
- 1 tsp Oyster sauce
- 1/4 tsp Rice vinegar
- 3 Tbls water
- 1/2 tsp corn starch
- 2 Tbls oil
Preparation:
- Start cooking some White Rice.
- Mix the batter in a bowl and add the chicken pieces into batter.
- Mix the sauce in a small bowl and reserve for later.
- Heat up cooking oil in a wok or frying pan
- Take chicken out of batter a few at a time and deep fry chicken pieces until golden brown on all sides.
- Transfer the chicken to a plate that has a few layers of paper towels on it.
- Add 2 tablespoons of oil to another frying pan and bring up to medium heat.
- Cook the bell peppers. Cook for a few minutes.
- Add garlic and saute the garlic until light brown
- Add the sweet and sour sauce into the pan and bring it to boil.
- Add the chicken and the chopped scallions
- Dish out and serve immediately over white rice.
For a family meal you will need to double this recipe.
