Tequila Lime Chicken is a delicious marinated recipe that can be used in fajitas, tacos, burritos or salads.

The marinade is easy to put together. It's important to use real lime juice and not the concentrated stuff. The meat will have an odd flavor if you don't use fresh limes.

After the it has marinated for over night it will look white in appearance. This is due to the acid in the citrus but don't worry about this, it will turn out tender and full of flavor after you grill it.

This recipe is great by itself or sliced up and made into fajitas. We have also cut it up into bite sized pieces and served it on a salad.

Tequila Lime Chicken Recipe


Marinate time: 8 - 12 hours

Cook time: 20 min

Ingredients:

  • 6 skinless, boneless chicken breasts
  • 2 cloves minced garlic
  • 1/2 cup orange juice
  • 1/2 cup tequila
  • 1 cup fresh lime juice (fresh not bottled)
  • 1/4 cup chopped fresh cilantro
  • 1 tsp salt
  • 1 tsp black pepper

 

Preparation:

  1. In a medium size bowl, stir together the orange juice, lime juice, tequila, cilantro, pepper, garlic and salt
  2. Put the chicken breasts into some ziploc bags, 3 per bag, and pour some marinade in each bag.
  3. Put them in the refrigerator overnight but no more than 12 hours.
  4. Preheat the grill to medium heat.
  5. Spray both sides of chicken with cooking spray.
  6. Grill the chicken 8 minutes on the first side, then turn and cook another 8 minutes. These are general times. Your grill may cook differently.
  7. Serve as fajitas, tacos or just as they are.
