White Bean Chicken Chili
A Hearty Meal For Your Family
White Bean Chicken Chili is a healthy alternative to traditional chili. The chicken breast is low in fat and the beans are high in fiber.
This recipe was passed down from a friend, and now it is one of our favorites! The combination of green chilis and cumin provide a distinct mexican flavor.
This is a great dish to make whenever there is left over chicken or on that first cool rainy day of fall when we desire a warm hearty meal.
You can top off your chicken chili with any combination of tomatoes, salsa, sour cream, green onions and shredded cheese.
White Bean Chili

Cook time: 30 min
Ingredients:
- 1 1/2 cups cooked chicken breast (chopped into bite sized pieces)
- 3 Tbls olive oil
- 1 chopped medium onion
- 1 (4 oz.) can chopped green chiles, drained
- 2 tsp ground cumin
- 3 Tbls flour
- 1 (14.5 oz.) can chicken broth
- 2 (16 oz.) cans Great Northern Beans
- 1/4 cup Cheddar or Monterey Jack cheese, shredded
Preparation:
- In large frying pan, saute onion in oil for a few minutes until transparent.
- Add flour, chilies, and cumin; stir and cook for 2 minutes.
- Add chicken broth and beans, then bring to a boil.
- Reduce the heat and simmer for 10 minutes.
- Add chicken last and cook until it gets hot.
- Serve into bowls
- Garnish with cheese, sour cream and salsa
