White Bean Chicken Chili
White Bean Chicken Chili is a healthy alternative to traditional chili. The chicken breast is low in fat and the beans are high in fiber. This recipe was passed down from a friend, and now it is one of our favorites! The combination of green chilis and cumin provide a distinct mexican flavor. This is a great dish to make whenever there is left over chicken or on that first cool rainy day of fall when we desire a warm hearty meal. You can top off your chili with any combination of tomatoes, salsa, sour cream, green onions and shredded cheese.
White Bean Chili Ingredients: 1 1/2 cups cooked chicken breast (chopped into bite sized pieces)
Preparation: In large skillet, cook onion in oil for 4 minutes or until transparent.
